Summer Protein Bowl with Creamy Avocado Sauce

As temperatures rise, many people want meals that feel lighter but still hold them through busy days. This protein bowl delivers steady energy with lean protein, fiber-rich veggies, and healthy fats—without heavy carbs or complicated prep.
Ingredients (Serves 2–3)
Protein Bowl
• 1½ lbs grilled chicken breast (or shrimp), sliced
• 2 cups cauliflower rice (fresh or frozen)
• 1 cup shredded cabbage or slaw mix
• 1 cup cherry tomatoes, halved
• ½ cup cucumber, diced
• Olive oil, salt & pepper
Creamy Avocado Sauce
• 1 ripe avocado
• 2 tbsp Greek yogurt (or dairy-free alternative)
• Juice of ½ lime
• 1 tbsp olive oil
• 1 small garlic clove
• Salt to taste
Instructions
1. Cook the base:Sauté cauliflower rice in olive oil with salt and pepper until tender.
2. Prepare protein:Grill or pan-sear chicken (or shrimp) with simple seasoning.
3. Blend the sauce:Add all avocado sauce ingredients to a blender or food processor and blend until smooth.
4. Assemble:Layer cauliflower rice, veggies, and protein. Drizzle with avocado sauce just before eating.
