
Spring Veggie Egg Bake - Low Carb • High Protein & SUPER simple!
Eggs provide highly bioavailable protein and support lean muscle as activity naturally increases. This bake is easy to prep once and eat all week—perfect for busy mornings or light lunches.
Ingredients (Serves 4–6)
· 10 large eggs
· ½ cup cottage cheese (blended smooth)
· 1 cup chopped spinach
· ½ cup diced zucchini
· ¼ cup red onion, diced
· ¼ cup feta cheese (optional)
· Salt & pepper to taste
Instructions
1. Preheat oven to 375°F.
2. Whisk eggs and blended cottage cheese until smooth.
3. Stir in vegetables and seasoning.
4. Pour into greased baking dish and top with feta.
5. Bake 30–35 minutes until set.
