Electric Apple and Broccoli Salad

To make you need:

3 cups of broccoli florets, finely chopped

1 organic green apple or gala apple if preferred

1/2 cup of walnuts

1/2 cup of dried cranberries

1/4 cup of finely chopped red onion


1/2 cup of Greek Yogurt

1 tablespoon of raw honey or maple syrup

zest and juice of 1 lemon

1 clove of garlic, minced fine

1/4 tsp of yellow curry

Salt and pepper to taste

To make:

Prepare the salad: Combine salad ingredients in a mixing bowl. Prepare the dressing: In a separate small bowl, whisk together dressing ingredients. Pour the dressing over the salad and toss to combine. Store in an airtight container in the refrigerator until ready to serve. Makes 4-6 servings.
