Summer Citrus Chicken Salad with Avocado & Pumpkin Seeds
This salad is refreshing, high in protein, rich in vitamin C (for collagen production), and includes healthy fats that support skin elasticity. Pumpkin seeds add a zinc boost — another skin-loving mineral.
Ingredients (Serves 2)
- 2 grilled chicken breasts, sliced (about 6 oz total)
- 4 cups mixed greens (arugula, spinach, romaine)
- 1/2 avocado, sliced
- 1/2 cup cherry tomatoes, halved
- 1/2 cup orange segments (or grapefruit for a tangy twist)
- 1/4 cup cucumber, thinly sliced
- 1 tbsp red onion, thinly sliced
- 2 tbsp pumpkin seeds (pepitas)
- Optional: Fresh mint or basil leaves for garnish
Dressing
Whisk together:
- 1.5 tbsp olive oil
- 1 tbsp fresh lemon juice
- 1 tsp Dijon mustard
- 1 tsp honey (or omit for lower sugar)
- Salt and pepper to taste
Instructions
- Toss greens, citrus, avocado, cucumber, and red onion in a large bowl.
- Top with sliced grilled chicken and pumpkin seeds.
- Drizzle with dressing and toss gently to coat.
- Garnish with fresh herbs and serve chilled.
