Ingredients (Serves 2)

  • 2 grilled chicken breasts, sliced (about 6 oz total)
  • 4 cups mixed greens (arugula, spinach, romaine)
  • 1/2 avocado, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup orange segments (or grapefruit for a tangy twist)
  • 1/4 cup cucumber, thinly sliced
  • 1 tbsp red onion, thinly sliced
  • 2 tbsp pumpkin seeds (pepitas)
  • Optional: Fresh mint or basil leaves for garnish

Dressing

Whisk together:

  • 1.5 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp honey (or omit for lower sugar)
  • Salt and pepper to taste

Instructions

  1. Toss greens, citrus, avocado, cucumber, and red onion in a large bowl.
  2. Top with sliced grilled chicken and pumpkin seeds.
  3. Drizzle with dressing and toss gently to coat.
  4. Garnish with fresh herbs and serve chilled.
