Healthy Turtle Candies

Gluten Free and possible to be Dairy Free depending on the type of chocolate you purchase

You will need:

  • 1.5 cup of raw pecan halves
  • 1.5 cups of packed raw pitted dates - If the raw dates are dry, don’t toss them, soak them in hot water for about 5 mins and drain.
  • 10 ounces of dark chocolate
  • 1 teaspoon of coconut oil or avocado oil
  1. Preheat the oven to 350 degrees (176 C) and roast 1 cup of the pecan halves on a baking sheet
  2. Take the .5 cup of pecan halves and put them in the blender, pulse until it becomes meal - set aside
  3. Next add the dates to the blender/food processor and mix until small bits form, then add the ground pecan meal back in and pulse again, its ok if it gets clumpy
  4. Take the blended dates and make some small balls the size of a large marble
  5. After the pecan halves have cooled add 4 of them to the date ball making the date ball look like it has “legs” - you will then put these in the freezer for about 15 mins
  6. While they are in the freezer, start the chocolate - In a double broiler add the chocolate and oil, stir until melted, or about 25-30 seconds in the microwave
  7. Remove the “turtles” from the freezer and add a generous spoonful of chocolate to the tops
  8. Place the candies back in the freezer for about 15 mins or until set

Tip! If you froze them for later, it takes about 10 mins before you can consume them.
